Citation: At approximately 1702 hours, I was performing a prechill finished standards test for Line # [redacted] I had a subgroup total of 35 on the page with the trim noncomformances, which exceeds the subgroup limit of 17. I notified [redacted] (Evis supervisor) of the noncompliance. He then informed the QA technician that a retest was needed. The QA technician performed a retest at 1711 hours and failed with a subgroup total of 18, which exceeds the tolerance total of 12. The Evis QA technician did two more retest at 1720 hours and 1726 hours and passed with subgroup totals of 8 and 10. The Evis QA technician did her first retest at 1732 hours and passed with a subgroup total of 10. The chilling QA technician did two more retest at 1802 hours and 1832 hours and passed with subgroup totals of 8 and 12. The last two retest were taken at 1902 hours and 1929 hours and passed with subgroup totals of 9 and 10. There was no product retained.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
