Citation: At approximately 2035 hours, I conducted a walk through in the evisceration department after giving the scheduled USDA relief breaks, between 2000 and 2030 hours, on SIS line # [redacted] As I walked past the trim station toward the back of the department, I noticed that within the final brush cabinet for Line # [redacted] the contaminated water level was not draining, leading to water level rising above the edges of the unit and overflowing through the horizontal openings onto the floor. Behind the final wash cabinet, I observed standing water that was approximately 2 to 3 inches deep. The flooding extending from underneath the brush cabinet to the north wall adjacent to the red painted pipe, thus creating an insanitary conditions. Evisceration supervisor, [redacted] was notified of the noncompliance and that a noncompliance record would be documented. [redacted] notified maintenance and corrective actions were initiated, which I verified. This document serves as written notification of the establishment's failure to comply with federal regulatory requirements 9 CFR 416.1 and 416.2(e)(4).

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(e)(4) Provide adequate floor drainage in all areas where floors are subject to flooding-type cleaning or where normal operations release or discharge water or other liquid waste on the floor;
