Citation: At approximately 1410 hours, while I was performing a walk through of the Evis department, I noticed condensation on multiple insulated pipes above and beside Line # [redacted] I immediately stopped the line and informed [redacted] (Evis supervisor) on the noncomformances. There was two insulated pipes above the line and ventor and another towards the middle of the department in the same area. There was another insulated pipe above the line at the pacman back up puller station. The last one was between Line # [redacted] and Line # [redacted] and continued over and above the drop chute for Line # [redacted] I observed all the wiping down of the pipes and didn't observe and dripping of the condensation onto the carcasses below. I then had the USDA inspector start the line back up. I went to the QA department and asked the QA technician to bring up the establishment's facilities report, the last check had been performed at1342 and had the condensate absent category marked as "reject", with a note saying, "Condensation was pesent in the white pipe front line [redacted] and line [redacted] notified (named group leader)." the note had a time assigned to it of 1345 hours.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
