Citation: At 1244 hours, while performing an inspection of a randomly selected sample of 10 birds taken from Line # at the prechill testing location in the Evisceration Department, I observed a dark green mass of smooth fecal material inside one of the ten birds. The mass was 1/2 inch in diameter and located next to the kidneys on the inside surface of the left thigh. Evisceration Department Supervisor, was called to the prechill testing location, and I showed her the noncompliance. I then touched the material and observed that it was pasty, and after smelling it I confirmed that it was fecal material. The establishment immediately initiated corrective actions including an 03J02 procedure. No further regulatory control action was required.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(e) Pursuant to 21 U.S.C. 456, 463, 608, and 621, the failure of an establishment to develop and implement a HACCP plan that complies with this section, or to operate in accordance with the requirements of this part, may render the products produced under those conditions adulterated.
