Citation: At approximately 2035 hours, I performed a prechill finished product standards test on evisceration line # [redacted] I had subgroup total of 22 for trim nonconformances, which exceeds the subgroup absolute limit of 17. Evisceration department supervisor, [redacted] was notified. QA conducted a retest at 2104 hours and scored 15, which exceeded the tolerance of 12. Thus the process was judged to be out of control as dictated by regulation. The QA technician completed prechill retest at 2114 and 2124 hours with subgroup totals of 10 and 12, respectively. Post chill testing was conducted at 2113, 2143, 2213, and 2243 hours with subgroup totals of 11, 11, 7 and 9 respectively. No product was retained.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
