Citation: At approximately 0615 hrs., after plants preoperational sanitation inspection and prior to the start of operations I observed the following deficiencies in the Wing, E-pad 12 and HQ departments: Wing Dept. - excessive amount of condensation on overhead pipes and ceiling over wing cutters. E-Pad 12- solid white plastic conveyor at the beginning of the department had two black grease marks on product contact area approximately 1" X1/8". HQ- two pieces of plastic inspection boards at inspection conveyor had several small black grease marks on product contact areas ranging from 1/2" X 1/8" to 1" X 1/8". HQ- a tool sanitizer had a piece of fat inside on product contact area approximately 1/2" X 1/8". I immediately notified sanitation group leader [redacted] of the deficiencies. All deficiencies were immediately corrected in my presence. Upon review of plants sanitation inspection records all the above deficiencies were found acceptable.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
