Citation: At approximately 1630 hours, I performed operational sanitation procedure, ISP code 01C02. I observed the following noncompliance at the Line # [redacted] pack side department: After the freezer, FLS Dr. [redacted] and I observed establishment employees logging off fully cooked product #10974-910 BBQ Bites. Establishment employees were quickly boxing off product as it exited the Line [redacted] freezer to keep product from falling onto the floor while maintenance repaired the packaging equipment. The employees quickly placed liners in cardboard boxes, diverted product off the freezer exit belt into the lined cardboard boxes, placed the lid on the boxes without covering the product with the sanitary liner (which is a product contact surface), then placed the boxes on pallets. The employees seemed to have a hard time keeping up with the product flow and many boxes were filled to the top with product so that the post-lethality exposed ready-to-eat product contacted the inner surface of the cardboard box lid (a non-product contact surface). There were two pallets logged off, approximately 40 cases, and I verified that in several boxes the liner did not cover the top of the product which allowed product to contact the box lid. Sec. 416.13 Implementation of SOP's (c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. Sec. 416.4 Sanitary operations (d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments [redacted] was notified of the noncompliance and responded immediately by implementing corrective action(s) to ensure no product was affected.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
