Citation: At approximately 2134 hours, I was performing a prechill finished standards test for Line # [redacted] I had a subgroup total of 32 on the page with the processing noncomformances, which exceeds the subgroup limit of 30. I notified [redacted] (Evis supervisor) of the noncompliance and he notified the QA technician that a retest was needed for Line # [redacted] The QA technician did a retest at 2142 hours, with a subgroup total of 26, which exceeds the tolerance total of 25. The first retest in postchill with prechill criteria was taken at 2159 hours and passed with a subgroup total of 7. The QA technician in Evis did another retest at 2152 hours and passed with a subgroup total of 22. Then another retest was taken at 2159 hours and passed with a subgroup total of 25. The chilling QA technician did another retest at 2229 hours and passed with a subgroup total of 10. The next two retest were taken at 2259 hours and 2329 hours and both passed with subgroup totals of 8 and 20. The last retest was taken at 2350 hours with a subgroup total of 20. There was no product retained.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
