Citation: At approximately 1613 hours, I was performing a prechill finished standards test for Line # [redacted] I had a subgroup total of 34 on the page with the processing noncomformances, which exceeds the subgroup limit of 30. I notified the QA technician that a retest was needed for Line # [redacted] Upon review of her last five FPS checks, she had just failed her last check at 1606 hours, which put her cusum total up to 12. This exceeds the start number of 11. The QA technician notified the chilling QA technician that a postchill with prechill criteria was needed. The first postchill with prechill criteria was performed at 1627 hours and passed with a subgroup total of 13. The Evis QA technician did the next two retest at 1642 hours and 1644 hours and failed with subgroup totals of 26 and 32, which exceeds the tolerance total of 25. The QA technician then did two more retest at 1653 hours and 1659 hours and passed with subgroup totals of 11 and 22. Meanwhile the chilling QA technician did another retest at 1657 hours and passed with a subgroup total of 16. The next two retest were taken by the QA technician at 1727 hours and 1757 hours both passing with a subgroup total of 20. The last two retest in the chilling department was taken at 1827 hours and 1850 hours and had passing subgroup totals of 23 and 11. There was no product retained.


381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
