Citation: At approximately 1900 hours, while I was performing my Finished Product Standard check for Line # [redacted] I found one of the ten sample carcasses had fecal on the tail. The green pasty material was approximately 1/8" in diameter and was on the area where the oil gland had been removed. I informed [redacted] (Evis supervisor) of this nonconformance. An 03J02 procedure, including corrective actions, was initiated immediately, therefore regulatory control of the process was not required. The last zero tolerance check had been performed at 1815 hours and was in compliance. A retest was taken at 1911 hours and was in compliance.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(e) Pursuant to 21 U.S.C. 456, 463, 608, and 621, the failure of an establishment to develop and implement a HACCP plan that complies with this section, or to operate in accordance with the requirements of this part, may render the products produced under those conditions adulterated.
