Citation: At approximately 0335 hours in build #1 and 0527 hours in building #2 USDA, Consumer Safety Inspector, [redacted] performed unscheduled ISP 01B02 for verification of pre-operational sanitation on wet side of line # [redacted] of building #1 and also line # [redacted] of building #2 of establishment 01325/P. USDA detected the following noncompliance: 1. The overhead auger in the grinder had product residue from previous use approximately 6 inches in length on the underside of the product auger. This auger is used to feed the grinder that is positioned directly below the auger. This auger is considered a product contact surface. 2. The frame around the breading application section of line # [redacted] in building #2 had product residue from use on previous day. This is NOT a product contact surface and no product was involved. USDA notified Sanitation Supervisors from both buildings of infraction and they in turn instructed sanitation employees to re-clean and re-sanitize prior to start of operations. NOTE: there was NO product in department at time of inspection. This noncompliance may inadvertently affect product. Meat and Poultry Inspection Regulations 416.13(c) and 416.4(b) was not met but states: 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. 416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. USDA did not take regulatory control actions in either area of building #1 nor #2 due to the Quick and effective response by the Sanitation Supervisor no down time was incurred. USDA reviewed the establishment's SSOP in "Plant View" dated 02/26/2011 and it did not reflect the findings of USDA In-plant Personnel performing the verification inspection. This NR serves as official written documentation of an SSOP MONITORING noncompliance.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
