Citation: At 0755 hours I completed a Finished Product Standards test on a sample of 10 birds randomly selected from Line # [redacted] at the prechill testing location in the Evisceration Department. The subgroup total for the test was 48 which exceeds the subgroup absolute limit of 30 for processing nonconformances. At 0802 the establishment conducted a retest, and the subgroup total was 29 which exceeds tolerance of 25 for this test. At this point the process was judged to be not in control, and [redacted] Evisceration Department Supervisor was notified of this noncompliance. Two additional rechecks were performed at 0826 and 0837 and failed with subgroup totals of 26 and 28 which both exceed the tolerance of 25 for this test. Two consecutive passing rechecks were completed at 0840 and 0846 with scores of 20 and 16. At this point the process was judged to be in control. Postchill testing using prechill criteria was performed in the Chilling Department every 30 minutes from 0819 until 1016, and all subgroup totals were below tolerance, therefore no product was held for rework.


381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
