Citation: At approximately 1811 hours, while I was performing my walk through after lunch break, I observed a plant employee picking up and moving a rubber mat that is provide for the employees to stand on. The employee was stationed as the back up viscera puller to the pac-man. She proceeded to move the mat to the part of the stand in which she was not standing, then went back to pulling the visceras from the carcasses without properly washing her hands. I immediately stopped Line # [redacted] and informed [redacted] (Evis supervisor) of the nonconformance. [redacted] and his Line # [redacted] group leader removed a number of the carcasses that were possible of being contaminated. The employee was moved and the line was started back up. The carcasses were reworked, using the chlorinated hose.

Regulation:

416.5(a) Cleanliness. All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.
