Violation: 416.13(a), 416.13(c)

Citation: At approximately 0710 hrs. after plants preoperational sanitation inspection and prior to the start of operations I observed the following deficiencies in the Breast Debone and the Wing Department . 1) The mandrels on the HQ machine had numerous specks of fat on the product contact areas. 2) Nonproduct contact: The white inspection conveyor on the HQ machine had protein buildup on the metal support bars. 3) Product contact: The long drip pan underneath the debone shackles had residue and protein buildup the length of the drip pan on the inside where the product lays when it falls off the shackles. 4) Product contact: The first two wing cutting machines had grease and protein buildup on the guide bar that guide the wings into the machine. I immediately notified sanitation group leader ([redacted]) and sanitation supervisor ([redacted] ). [redacted] and [redacted] took immediate corrective actions in my presence. Upon review of plants preoperational sanitation records the above mentioned deficiencies were found acceptable.


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.
