Citation: At 1100 while performing an FPS test on gizzards in the Gizzard/Neck Department, I observed the following insanitary conditions: 1.) Overflow water at the Neck CIP Exit/Chiller Entrance was hitting a clogged metal mesh and splashing out onto the floors, wallls, and door. This water contained meat and fat scraps which were sticking to the wall and door and were accumulating on the surrounding floor. 2.) Standing water with a white film on top in the corner where the blue INSPEXX barrel is located. 3.) The floor drain cover adjacent to the Neck Chiller Exit was clogged with meat and fat scraps causing an occasional overflow of water onto the surrounding floor resulting in the accumulation of meat and fat scraps in a 4 foot radius. This drain is located near the center of the department and is in a heavily traveled area. In the few minutes I spent making these observations, one employee dragged a full sack of trash past the drain and through the accumulation of meat and fat scraps, and another employee pushed a cart with bags of ice through the same area, further spreading the insanitary conditions. Later while touring the Evisceration Department, I observed similar conditions in the rear of the the department beneath both Line # [redacted] and # [redacted] The most notable conditions in this department was a film of grayish material on top of standing water between the wall and the Final Wash Cabinet for Line # [redacted] was notified of the noncompliances. The drains were cleared and the floors were cleaned. No product was directly affected by these conditions.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(e)(4) Provide adequate floor drainage in all areas where floors are subject to flooding-type cleaning or where normal operations release or discharge water or other liquid waste on the floor
