Citation: At approximately 2026 hours, while in the process going to give USDA relief breaks on line [redacted] I saw a live medium size cockroach in the Evisceration department. It was located on the floor of south wall adjacent to the trash receptacle located by the center door in front of the sinks within the evisceration department. General Production Manager, [redacted] was notified of the presence of the pest and that a noncompliance record would be documented. Immediate corrective actions were taken by removing and discarding the vermin. [redacted] informed me that the incident was going to document in the QA log. This establishment was not in compliance with regulatory requirement 9 CFR 416.2(a).


416.2(a) Grounds and pest control. The grounds about an establishment must be maintained to prevent conditions that could lead to insanitary conditions, adulteration of product, or interfere with inspection by FSIS program employees. Establishments must have in place a pest management program to prevent the harborage and breeding of pests on the grounds and within establishment facilities. Pest control substances used must be safe and effective under the conditions of use and not be applied or stored in a manner that will result in the adulteration of product or the creation of insanitary conditions.
