Citation: At approximately 1440 hours, I was performing a prechill on Line # [redacted] I had a subgroup total of 42 on the page with the processing noncomformances, which exceeds then subgroup limit of 30. I notified [redacted] (Evis supervisor) on the noncompliance. [redacted] then notified the QA technician that a retest was needed for Line # [redacted] The QA technician performed a retest at 1458 hours and failed with a subgroup total of 27, which exceeds the tolerance total of 25. A postchill with prechill criteria was performed at 1512 hours and passed with a subgroup total of 9. The Evis QA technician did the next retest at 1510 hours with a subgroup total of 20 and another at 1520 hours and passed with a subgroup total of 21. The chilling QA technician the next postchill retest at 1537 hours with a subgroup total of 11 and another at 1555 hours with a subgroup total of 10. The next postchill retest was performed at 1621 hours and failed with a subgroup total of 32. The establishment started retaining carcasses that were coming out of the chiller. The QA technician did the next postchill retest at 1634 hours and passed with a subgroup total of 19, which stopped the retention of carcasses. The next postchill retest was performed at 1643 hours with a subgroup total of 14 and another at 1710 with a passing subgroup total of 18. The last postchill retest was taken at 1713 hours and passed with a subgroup total of 16. There was a total of 9 tanks of carcasses retained with the USDA retain tag #'s B36 279321, B36 279322, B36 279326, B36 279331, B36 279340, B36 279344, B36 279345, B36 279349, B36 279350.

381.76(b) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
