Address: 403 South Custer Ave, New Holland, PA 17557
Establishment No.: p01325

USDA Inspection Report: 19 Jan 2011

Code: 04C04
Violation: 381.76(b)

Citation: At 0837 hours I completed a Finished Product Standards test on a sample of 10 birds randomly selected from Line # [redacted] at the prechill testing location in the Evisceration Department. The subgroup total for the test was 35, which exceeds the subgroup absolute limit of 30. I informed the QA technician, and a retest was performed immediately, the result of which was 32 which exceeds tolerance of 25. At this point the process was judged to be not in control. I notified [redacted] of the noncompliance. At 0959 and 1004 hours (after the regularly scheduled lunch break) the establishment was able to conduct 2 consecutive passing rechecks. At this point the process was judged to be in control in the Evisceration Department. Postchill testing using prechill criteria was performed in the Chilling Department starting at 0913 and every half hour thereafter until 1213. All retests conducted were below tolerance, therefore no product was held for rework.
