Citation: During second shift slaughter of 01/11/2011, four cadavers were condemned at postmortem inspection in the evisceration department. The condemned chickens had bloody viscera, subcutaneous vasodilatation, blood within the body cavity, and blood in the muscle tissue. The necks were engorged with blood as well as had jagged edge cut surfaces where the heads were removed. Evisceration supervisor, was verbally notified upon each occurrence. The cadavers occurred at 16:05 hours at inspection line 16:50 hours at inspection line and the remaining to occurred while I was giving reviewing birds on the hang back rack at 20:30 hours on inspection station 2-1 (two prior to break and two after break). was also informed that a noncompliance report was to be documented. No effective corrective actions were proposed to address the noncompliance. The establishment was not in compliance with 9 CFR 381.65(b) and 381.90. This document serves as written notification that your failure to comply with regulatory requirements may result in additional regulatory or administrative action. Past Similar NRs - Previous Ineffective Plant Actions: The linked NRs are currently under appeal process review and no corrective actions have been proposed. Regulation:

381.65(b) Poultry must be slaughtered in accordance with good commercial practices in a manner that will result in thorough bleeding of the carcasses and ensure that breathing has stopped prior to scalding. Blood from the killing operation must be confined to a relatively small area.

381.90 Carcasses of poultry showing evidence of having died from causes other than slaughter shall be condemned.
