Citation: At 1845 hours, I performed a prechill finished products standards test on evisceration line # [redacted] A subgroup total of 19 resulted for processing nonconformances, and a subgroup total of 27 resulted for trim nonconformances which exceeded the absolute limit of 17. I notified Evisceration Supervisor [redacted] and the QA technician who was present at the prechill station. The QA technician performed a retest of line # [redacted] which also failed with a total of 21 for trim nonconformances which exceeded tolerance of 12, at approximately 1915 hours.. The process was judged to be out of control as by regulation. Corrective actions were initiated by the plant. At 1935 hrs QA performed another retest at prechill and obtained a subgroup total of 18 plus a cusum of 7 for a total of 25 which also failed. Subsequent prechill retests at 1943 hrs and 1949 hrs passed with totals of 5 and 10 respectively. Postchill testing by QA began at 1958 hrs after carcasses started exiting the chiller after the break, with a subgroup total of 9. Additional tests were conducted at 2028 hrs, 2058 hrs, 2128 hrs with subgroup totals of 10, 11, and 6 respectively. No product was retained. This document serves as written notification that your failure to comply with regulatory requirements may result in additional regulatory or administrative action. Past Similar NRs - Previous Ineffective Plant Actions: Retraining of plant personnel completed on 12/27/10 failed to prevent recurrence of the noncompliance. NR: 95-2010 dated 12/20/2010


381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
