Citation: During the second shift slaughter of 01/06/2011, seven chickens were condemned as cadavers at postmortem inspection in the evisceration department. The condemned chickens had bloody viscera, subcutaneous vasodilatation, blood in the body cavity, and blood in the muscle tissue. The necks were engorged with blood. The cadavers were distributed throughout the course of the shift. Evisceration Supervisor [redacted] and/or GPM [redacted] were notified upon each occurrence. After the first occurrence, Mr. [redacted] informed me that the kill blade had been adjusted to provide a deeper cut into the necks. Despite this corrective action, additional cadavers occurred; the last two were condemned at the end of the slaughter. Upon viewing the cadavers, Mr. [redacted] acknowledged that the birds were not properly bled. The establishment is not in compliance with 9CFR 381.65(b) which requires that the poultry be slaughtered in a manner that results in thorough bleeding of the carcasses ensuring that breathing has stopped prior to scalding. This document serves as written notification that your failure to comply with regulatory requirements may result in additional regulatory or administrative action. Past Similar NRs - Previous Ineffective Plant Actions: The establishment did not propose corrective actions to me in response to the noncompliance of 01/05/2011. NR: 3-2011 dated 1/5/2011

Regulation:

381.65(b) Poultry must be slaughtered in accordance with good commercial practices in a manner that will result in thorough bleeding of the carcasses and ensure that breathing has stopped prior to scalding. Blood from the killing operation must be confined to a relatively small area.

381.90 Carcasses of poultry showing evidence of having died from causes other than slaughter shall be condemned.
