Citation: At 0435 hours I conducted a Preoperational Sanitation inspection in the Gizzard/Neck Department. Among the links of all 3 of the white plastic chain link product conveyors on the gizzard production line, I observed various quantities of meat and fat scraps ranging in size from specks up to 1/2 inch. In addition, a roller on the bottom portion of the first inspection conveyor (included above) held an accumulation of the aforementioned meat and fat scraps. [redacted] QSI Supervisor, was present during my inspection and observed these noncompliances. All 3 belts were cleaned in my presence, reinspected and found to be acceptable prior to the start of operations, therefore no product was affected and no further regulatory control action was required. I later reviewed the records and observed that this department was inspected by the establishment's designee at 0410 hours, and all of the areas in this department were marked as "Accept". This indicates that monitoring was not effective in this area.


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.
