Citation: At approximately 2040 hours, I was performing a prechill standards test on Line # [redacted] I had a subgroup total of 20 on the page with the trim noncomformances, which exceeds the subgroup absolute limit of 17. I notified the QA technician that a retest was needed for Line # [redacted] I then notified [redacted] (RKP supervisor) of the noncompliance. The QA technician performed a retest at 2049 hours and failed with a subgroup total of 24, which exceeds the tolerance total of 12. A postchill with prechill criteria was performed at 2059 hours and passed with the subgroup total of 6. The QA technician then did a retest in Evis at 2112 hours and passed with a subgroup total of 5. Then another retest at 2119 hours and passed with a subgroup total of 10. The chilling QA technician did the next postchill retest at 2129 hours with a passing subgroup total of 3 and another at 2159 hours with a passing subgroup total of 7. The next postchill retest was performed at 2229 hours with a passing subgroup total of 5. The last postchill retest was performed at 2249 hours and passed with subgroup total of 3. There was no product retained.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
