Citation: During a scheduled preoperational sanitation inspection in the Evisceration Department, I observed several long cracks in the floor near the gizzard harvester which run from various points of the wall to the drain for Line # [redacted] These cracks were all lined with brown stains stemming several inches on either side of each crack. These same brown stains were also present on the floor where it joins the wall in the same vicinity as the cracks. Upon closer inspection I observed water welling up and bubbling out of these cracks. I also hunched down, and from a few feet away from the floor I could detect a distinct odor of decay. Further down the wall towards the rear of the deparment, there is a hand wash station mounted to the wall with a drain leading into the floor. Around this drain and against the wall there is a large brown stain similar to the stains around the cracks in the floor. The cracks in the floor represent a failure to keep the floors in good repair which is noncompliance with 9 CFR 416.2(b)(1). The cracks also result in the floor not being impervious to moisture which is noncompliance with 9 CFR 416.2(b)(2). I immediately showed Evisceration Department Supervisor, what I had found. Later, [redacted] and [redacted] were also shown these insanitary conditions. As an immediate corrective action, the establishment assigned an employee to monitor and continually wash the floor in this area with chlorinated water to prevent any product from being affected during operations.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
