Citation: At approximately 1430 hours, I started checking carcasses on Line # [redacted] with the split tails to see in the establishment's abdominal Airsacculitits reprocess marking procedures were being completed as it is written in the procedure. I observed 9 out of 25 carcasses with (1 with) a kidney and Airsacculitits exudates not properly vacuumed out of the carcasses as according to MPI Reg. 381.76(b)(3)(iv)(c). I immediately informed [redacted] of the noncompliance and that carcasses exiting the chiller with the abdominal Airsacculitits markings should be checked and retained if the task is not completed. There was 2 tanks both approximately 3/4 full that were retained with the USDA retain tag #B36 279329 and B36 279334.

381.76b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
