Citation: At approximately 1437 hours, one Dead on Arrival (DOA) bird was hung back at inspection station line [redacted] Then at approximately 2039 hours another DOA presented to inspection station 2A. Evisceration supervisor, [redacted] was immediately notified upon each occurrence. He was shown each bird and given a detailed explanation to why they were condemned as DOAs. Prior to the second DOA, I personally informed the RKP supervisor, [redacted] that there was one DOA this afternoon. I explained to both supervisors that it is not sanitary for the establishment to allow adulterated carcasses through the evisceration equipment. This document serves as written notification that your failure to comply with regulatory requirements 9 CFR 416.13(c) and 416.4(d) could result in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
