Citation: At 0614 hours I completed a Finished Product Standards (FPS) test on a sample of 10 birds randomly selected from Line # [redacted] at the prechill testing location in the Evisceration Department. The subgroup total for processing nonconformances was 34 which exceeds the subgroup absolute limit of 30. I immediately notified a QA technician so that a retest could be performed. The subgroup total for the retest conducted at 0621 hours by the establishment was 33 which exceeds tolerance of 25. At this point the process was judged to be not in control, and [redacted] Evisceration Department Supervisor, was notified. The establishment conducted two passing rechecks at 0654 and 0656 hours with subgroup totals of 16 and 6. At this point the process was judged to be in control. FPS testing at the postchill testing location in the Chilling Department using prechill criteria began at 0656 hours and concluded at 0825 hours with all subgroup totals below tolerance of 25, therefore no product was held for rework.

381.76(b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
