Citation: At approximately 2230 hours, I was doing a walk through Evis to complete my 01C02 task. The last chicken had went passed the trimmer at the mirror. Then I observed the Line # [redacted] group leader open up the inside outside bird washer cabinet(IOBW) and start hanging the carcasses that had fallen to the bottom of the cabinet back onto Line # [redacted] I immediately asked him to remove them from the line and informed him that that was not proper procedure. He threw the two carcasses into the condemned barrel at the mirror trim station, along with the approximately 6 or more carcasses that were left in the cabinet. I immediately informed [redacted] (Evis GPM) of the noncompliance. I looked at the establishment's SSOP plan and hazard analysis and found no procedures written about carcasses left in the bottom of the IOBW cabinet. This also is not in compliance with 9CFR 381.66. There is no way of knowing exactly how long those carcasses were in the cabinet, so there is a question whether it meets the time and temperature regulation.

Regulation:

416.12(a) The Sanitation SOPís shall describe all procedures an official establishment will conduct daily, before and during operations, sufficient to prevent direct contamination or adulteration of product(s).

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
