Citation: At 0725 hours I entered the Gizzard/Neck Department to perform Finished Product Standards tests. I immediately observed many sheets of plastic attached to the ceiling with tape. Upon further inspection, I observed that these sheets of plastic were diverting water which was dripping from the joints in the ceiling and the ventilation ducts. However, one joint in the ceiling was leaking water and was not covered. This resulted in 3-4 drops of water every few seconds dropping to the floor near empty, covered tanks and where employees were passing through. In addition, one sheet of plastic was hanging very low, and the drops of water hitting it were splashing small amounts of water onto the outside of a plastic sheet covering one empty tank. [redacted] was present, and I showed her these noncompliances. The establishment's management responded immediately, including measures to prevent contamination of product and product contact surfaces. I remained present until sanitary conditions were restored, and no product or product contact surfaces were involved with these observations, therefore no regulatory control actions were required.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
