Citation: At approximately 1418 hours, I was performing a fecal check on Line # [redacted] when I observed so greenish material inside of one of the ten sample carcasses. The fecal was approximately 1/8" dia. and on the kidney area. Furthermore had this carcass not been included in my sample, it would have entered the chiller. I informed [redacted] (Evis supervisor) of this noncomformance. An 03J02 procedure, including corrective actions, was initiated immediately, therefore regulatory control of the process was not required. The last zero tolerance check had been performed at 1415 hours and was in compliance. A retest was taken at 1436 hours and was in compliance.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(e) Pursuant to 21 U.S.C. 456, 463, 608, and 621, the failure of an establishment to develop and implement a HACCP plan that complies with this section, or to operate in accordance with the requirements of this part, may render the products produced under those conditions adulterated.
