Citation: At approximately 1440 hours, I performed a review of the establishment's facilities (ISP Code 06D01) in the evisceration department. I observed beaded condensation on the overhead white PVC pipes above the evisceration line [redacted] between the evisceration machine and the neck skinner. I returned to the area at approximately 1450 hours with Frontline Supervisor, Dr. [redacted] and observed that the establishment did not take corrective actions to remove the condensation. I immediately notified [redacted] Evisceration Supervisor, of the noncompliance and informed him that a NR would be issued. I did not observe product adulteration or contamination due to the overhead condensation. Establishment management took immediate corrective actions once they were notified of the noncompliance therefore no regulatory action was taken. This serves as documentation of noncompliance with 9 CFR 416.2(d).

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
