Citation: At approximately 2034 hours, I was performing a prechill finished standards test on Line # [redacted] I had a subgroup total of 31 on the page with the processing noncomformances, which exceeds the subgroup limit of 30. I notified [redacted] ( Evis supervisor) on the noncompliance. I then notified the QA technician that a retest was needed for Line # [redacted] The QA technician performed a retest at 2214 hours and failed with a subgroup total of [redacted], which exceeds the tolerance total of [redacted] A postchill with prechill criteria was performed at 2131 and passed with a subgroup total of [redacted] The Evis QA technician did the next retest at 2142 hours with a subgroup total of [redacted] and another at 2211 hours and past with a subgroup total of [redacted] The chilling QA technician did the next postchill retest at 2201 with a subgroup total of [redacted] and another at 2231 hours with a subgroup total of [redacted]. The next postchill retest was performed at 2301 with a subgroup total of [redacted]. The last two postchill retest were performed at 2331 hours and 0001 hours and passed with subgroup totals of [redacted] and There was no product retained. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

381.76b)(1) There are five systems of postmortem inspection: Streamlined Inspection System (SIS) and the New Line Speed (NELS) Inspection System, both of which shall be used only for broilers and cornish game hens; the New Turkey Inspection (NTI) System, which shall be used only for turkeys; Traditional Inspection; and Ratite Inspection.
