Citation: While touring the cut up area with Dr. [redacted] at about 10:15 hours, we observed the following: 1. Wing tips were being collected in a steel tank marked inedible with a red shovel inside. I presumed and confirmed with [redacted] that this product is probably being collected for pet food. However, the plant sanitation procedure in this area for operational sanitation is for that of product contact standards. 2. The shovels used for dry ice were being stored on top of the container touching the insanitary surface in the breast debonong and Whole bird packing area. Mr. [redacted] and Mr. [redacted] respectively were shown the noncompliance. No product was observed to be affected.


416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
