Citation: At approximately 2130 hours, I was waiting for the Line # [redacted] group leader to finish his check on the tank of reprocessed carcasses, so I could conduct my own test on the tank. While waiting I observed a drip of water fall into the tank of carcasses. Upon further investigation, I found that the pipe had condensation on it and multiple drops dripped off the pipe connector at the elbow of the above pipe into the tank. This pipe elbow is located next to the Line # [redacted] unloader. I informed the group leader to please go get his supervisor. I informed [redacted] of the noncompliance and retained the tank of carcasses with the USDA retain tag# B36 279279. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
