Regulation: While Mr. [redacted] Acting FLS and I were touring the operations and the facility for a general inspection at about 12:50 hrs, we observed beading condensation and some debris (meat and fat scraps) which appeared to have been splashed from the floor onto the overhead ducts in the shipping hall area near Elevator #2. Three tanks filled with product, but covered with a blue plastic cover were being stored under this area. No condensation dripped on the product. [redacted] was shown the noncompliance. He had the area cleaned and told us that he will talk to Sanitation staff regarding the splash and cleaning as well as storing the product underneath.

416.2(a) Grounds and pest control. The grounds about an establishment must be maintained to prevent conditions that could lead to insanitary conditions, adulteration of product, or interfere with inspection by FSIS program employees. Establishments must have in place a pest management program to prevent the harborage and breeding of pests on the grounds and within establishment facilities. Pest control substances used must be safe and effective under the conditions of use and not be applied or stored in a manner that will result in the adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
