Citation: While Mr. [redacted] Acting FLS and I were touring the operations and the facility for a general inspection at about 1300 hrs, we observed an orange tote that was smeared with fat and meat scraps all over (apparently it was used to remove product from the hopper) laying on the floor next to the Leg grinding machine. [redacted] Department Supervisor, and two other associates were clearing the machine, and while we were observing, a drum stick was removed from the machine and placed in the tote laying on the floor. Upon inquiring if this product was edible, the answer I received was affirmative. The orange totes used for edible product are considered product contact surfaces and therefore, must be handled in a sanitary manner and protected from non-product contact surfaces.


416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
