Citation: At 0752 hours while performing a Finished Product Standards Test at the prechill testing location in the Evisceration Department on a sample of 10 birds randomly selected from Line # [redacted] I observed some smooth, dark green, pasty material inside one of the 10 birds. The material was 1/3 inch in diameter and was located on the right side among the ribs where the lung had been removed. After smelling the material I concluded that it was fecal material. Furthermore, this bird would have entered the chiller without further intervention by the establishment had it not been included in my random sample. I notified [redacted] Evisceration Department Supervisor, of the noncompliance. The establishment implemented immediate corrective actions, therefore no regulatory control action was required. The establishment performed a retest at 0759 hours which was acceptable with no additional findings. I immediately began an 03J02 procedure.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(e) Pursuant to 21 U.S.C. 456, 463, 608, and 621, the failure of an establishment to develop and implement a HACCP plan that complies with this section, or to operate in accordance with the requirements of this part, may render the products produced under those conditions adulterated.
