Citation: At approximately 0515 hours today, I went to the wet side of plant 2, to perform scheduled procedure 01B02 for Lines # [redacted] and # [redacted] After the monitor verified they have completed their inspection, I proceeded to perform my own verification. The following is what I observed: Line # [redacted] The Stainless Steel Rods under the right side Formax conveyor belt had a build up of product residues covering the majority of the entire one side of the rods. The conveyor belts starting from the Formax right side conveyor belt on thru to the fryer conveyor belt/ web was found with pieces of meat. There were 8-10 pieces of meat found on the conveyor belts. These findings varied in size. Line # [redacted] The inside rod, of the Pre-Dust hopper held pre-dust that covered approximately the entire bottom half of the road. The Batter mixer's inside tank held left over batter from the previous days production. This finding covered the sides of the part of equipment that holds the paddle in place ( inside the tank) and also found was a 1 ¨" piece of unidentified foreign material inside. The hopper of the batter mixer held batter covering half of the inside, right panel and half of the inside, rear panel. Three of the paddle/ pitchfork product handling equipments were found with fat, grease and/ or other product residues covering the direct contact surfaces of the equipment.. These pieces of equipment were currently on the hook hanging on the outside of the blender. QSI Supervisor- [redacted] was present during these findings and was immediately notified of this noncompliance. The establishment failed to comply with the regulatory requirements listed under 9 CFR 416.13(c), 416.4(a) and 416.4(b).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
