Citation: Plant # 1 Leg Grinding department. At 20:15 while talking to Mr. ( Department Supervisor) about plumbing issues I observed a employee picking raw poultry from the floor and placing it in a edible product tank where chicken backs were being dump from a moving conveyor line. Mr. informed me that this product will be used for pet food. He also informed that they had a inedible tank near by for putting product that had fallen unto the floor. Supervisor took immediate action by placing a inedible tag on the effect tank and removing from department. Plumbing issue in the Leg Grinding department were in three areas along the water line they were dead end pipes ,located in the center of this department Dead end pipes can cause a insanitary condition.


416.2(e)(3) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment;

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
