Citation: At approximately 2128 hours, while I was performing a walk through for my 06D01 scheduled task, I noticed condensation on multiple insulated pipes and a drip pan above product on Line # [redacted] I immediately stopped the line to prevent product contamination and informed [redacted] of the noncompliances. I showed him the insulated pipe above the opener and running parallel with Line # [redacted] down to right before the pac-man. Then the drip pan under the cog for the pet food harvester. Then another pipe above the line and the back up puller for the pac-man and another above the neck breaker. The last insulated pipe was between Line # [redacted] and Line # [redacted] and above the drop chute for Line # [redacted] Nobody was available in HACCP or the QC department, so I asked [redacted] to bring up the establishment's Facilities report, the last check had been performed at 2123 hours and had the condensate absent category marked as "reject", but no corrective action had yet been taken. The comment added by the HACCP checker didn't specify the location of the condensate, just that it was a tube with condensation on it and informed group leader. The plant failed to take immediate and proper corrective actions after observing the deficiency which had the potential to contaminate product. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
