Citation: At approximately 1800 hours, I observed water dripping from the ceiling in the evisceration department beside the neck breaker machine on line # [redacted] was shown the dripping water. There was no product present below the dripping water, but chicken carcass racks are often placed there. The water was dripping steadily and there was no beaded moisture visible on the ceiling panel, indicating that the water was leaking from above the ceiling panel. It had rained the day before and other parts of the ceiling already had plastic hanging to control dripping water. The previous shift, I observed water dripping from the same exact location and notified [redacted] at that time. Maintenance investigated then and determined that it was not necessary to hang plastic at that time. The humidity in the area was noticeable, and extensive condensation was present on overhead pipes and chlorine tubes between the neck breaker machine and the lung gun station on line # [redacted] The water supply to line # [redacted] consisted of uninsulated metal pipe which was dripping condensation continuously which could not be controlled by mopping.. [redacted] was notified. In addition condensation was observed on an insulated pipe over the line # [redacted] dumper. No direct contamination of product was observed. Mr. [redacted] stated he would put personnel in the area to mop the condensation. This document serves as written notification that your failure to comply with regulatory requirements may result in additional regulatory or administrative action. Past Similar NRs - Previous Ineffective Plant Actions: The preventive measure for condensation, adding a check for the HVAC system to plant view 3x per shift, did not prevent recurrence of the condensation noncompliance. NR: 45-2010 dated 6/23/2010


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
