Violation: 416.13(a), 416.4(a)

Citation: At approximately 08:00 hours after the establishment had completed pre-operational sanitation inspection, while performing task 01B02 pre-operational sanitation inspection verification procedure in the frank peeling room 2160. This is were I observed the following non-compliance: In room 2160, there were 4 frank peeling pipes found unclean. These pipes had brownish residue built up inside lining the interior. These pipes are used to feed to the peeler cooked product. The departure chute for the peeler had product residue in on the horizontal and vertical surfaces in several places. Both issues mentioned were from a previous day's production. These are product contact surfaces and a potential food safety hazard. The area supervisor Ms. was notified verbally and in writing of this non-compliance report and failure to comply with regulatory requirements of: 9 CFR 416.13a, 416.4(a). Upon review of the pre-operational records there was an entry made of one pipe was found unclean. I reviewed the SSOP plan, which was revised 05/18/10. This document serves as a written notification that failure to comply with regulatory requirements could result in additional regulatory action as outlined in 9 CFR 500.4.

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
