Citation: On March 8, 2012 at approximately 1455 hours while performing Operational Sanitation on the Harvest floor I noticed that the water pressure was low and the 180 degree water hoses didn't have hot water. I informed Supervisor, of this problem and he informed the maintenance crew. I then returned to the Harvest floor and waited for the problem to resolve. At approximately 1500 hours the inspection station and splitting saw water hoses were still not reaching the required degrees, as per the plant's SSOP. Also the water pressure was still low. This two issues did not allow proper sanitation of the splitting saw or the inspection tray. I informed QA,that operations could not continue until the water issue was resolved, and she proceeded to stop the line. The line was stopped for approximately 10 minutes. After the water pressure was adequate, and the inspection station and splitting saw water hoses reached the required 180 degrees, I allowed the plant to continue operations.
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.2(e)(1) Carry sufficient quantities of water to required locations throughout the establishment
