Citation: During the performance of the Food Safety Assessment, generic E. coli sampling procedures were observed on 5/17/11. The establishment was not following the written program. The following noncompliances with sample collection procedures were observed. 1. The carcass was randomly selected but a random number generator was not utilized as described in the establishment's program. 2. Instead of swabbing sites from least to most contaminated (flank, brisket, rump) as specified in the establishment's written program, samples were swabbed starting with the rump, then flank, then brisket. 3. The establishment was not swabbing locations on the carcass as described in supporting documentation. plant manager, was informed of the noncompliances. The establishment is not complying with regulatory requirements of 9CFR 310.25(a)(i) and 310.25(a)(2)(i). This document serves as written notice that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.
