Citation: At 0805 this morning while touring the carcass cooler I observed several overhead areas that had condensation accumulating on their ventral surfaces, namely the pans that are under the cooling units and on the 'chill pipes'. I notified and of the potential for product adulteration had there been a carcass moved or stored under the affected areas, which was not the case at this time. To prevent product adulteration from occurring, since no carcasses from today's kill had entered the cooler yet, I rejected the cooler by applying US Reject Tag # 737485 to the door where the carcasses enter the cooler. At 0825 I reinspected the affected area and released the cooler by removing my tag, since no condensation was observed. 416.1 states; " Each official establishment must be operated and maintained in a manor to prevent the creation of insanitary conditions and to ensure that product is not adulterated". 416.4(d) states in part " Product must be protected from adulteration during .....storage....."

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
