Violation: 416.13(c), 416.4(b), 416.13(c), 416.4(a)

Citation: After the plants pre-operational sanitation inspection and prior to the start of operations, the following non-compliances were observed in the fresh meat cutting room this morning at 6:00 am: The circular and reciprocating saws had meat and fat pieces/smears ranging in size from 1/8 inch to 1 inch, approximately on multiple surfaces including the blades, blade guards, and handles. The hook on the hoist, the hoist control, and areas of one cutting table had fat pieces on several surfaces of more than 1 inch, approximately. The non-compliances included product contact surfaces from a previous days operations. I notified Jason of my findings at 6:05 am. Corrective actions were taken in my presence and the items were reinspected and found acceptable at 6:20 am. The plants SSOP log showed that the area was inspected and ready for production prior to my inspection. The requirements of parts 416.13(c) and 416.4(a) of 9 CFR were not met.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
