Violation: 416.13(c), 416.2(d)

Citation: On Tuesday May 29, 2012 approximately at 1315 hours while performing Operational SSOP task, I saw the following non compliances, while I was walking in the middle cooler, I saw a lot of condensation on the ceiling and many rails in the middle cooler and the condensation was dripping on 6 Market Hogs carcasses. The rail which is located next to the side entrance of the cutting room has a lot of condensation and was dripping on 3 market hogs carcasses. Also, I saw a condensation on the rail in the disposition cage, entrance of the big cooler, and entrance of the killing floor. I notified QC Personnel of the non compliance and affixed my rejection tag # B43736040 on the rail next to the cutting floor. QC Personnel took an immediate corrective action and removed all of the condensation spots and also washed all of the adulterated carcasses.The plant is not in compliance with 9 CFR 416.2(d), 9 CFR 416.1 and 9 CFR 416.13(c).This NR is linked to NR # YKM1116051022N dated 5/22/2012, prior corrective action was not effective to prevent the occurance of the non compliance.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
