Citation: On Tuesday May 15, 2012 approximately at 0700 hours while performing the Task Pre-OP SSOP and after the plant employees performed theirs, I found the following non compliance: I found accumulation of fat and debris on the electric switch of the inspection line. I also found fat and dirt accumulation on the exterior surface of the chad cabinets facing the wall. I did not apply my tag to reject those items , because the cleaning crew cleaned them immediately infront of me. Also, when I was going back to USDA office, I noticed there are two Jarvis saw blades hanging by the wall and covered with brownish oxidation. I affixed my tag #B 43736039 on the blades. QC Personnel was informed with the non compliances. The plant is not in compliance with 9 CFR 416.13(c) States in part that each official Establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. 9 CFR 416.4(a) States in part that all food contact surfaces including food contact surfaces or utensils, and equipment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.9 CFR 416.4(b) States in part that that all non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.9 CFR 416.4(d) States in part that product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
