Citation: On Wednesday 03/07/2012 approximately at 0820 hour while performing the procedure SPS review and observe, I found the following non compliance: while performing the procedure SPS in the storage room, I found heavy condensation on theceiling of the storage room and it was dripping onsome salt bags underneath it and some of the salt bags were wet from the outside. I applied tag # B43736038 on the salt bagsand retained them. [redacted] QC Personnel was informed of the non compliance. The plant is not in compliance with 9 CFR 416.2(d) which statesVentilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. And also 9 CFR 416.1 which states Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
