Citation: On December 12, 2011 at approximately 1500 hours while I was in the kill floor, I noticed a condensation is dripping from the ceiling on the stomach machine which was opened and has a product inside, also I saw the condensation was dripping on an open box on the ground beside the stomach machine which has plastic lids for the blood buckets. I took a regulatory action and applied a tag# B43736018 on the stomach machine and the opened box. I informed [redacted] Qc Manager and [redacted] Manager of the non compliance. I removed my tag after the establishment took their corrective action and removed all of the condensation above the stomach machine and also washed the affected plastic lids. the establishment is not in compliance with 9 CFR 416.1 which states " General rules, each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated and 9 CFR 416.2(d) which states" ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product& the creation of insanitary conditions must be provided.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
